Seasoning is carbonized oil bonded to cast iron. Before adding any seasoning, check whether the tawa already arrives pre-seasoned and follow its exact care guide. Elgi Ultra, for example, lists its current Cast Iron Dosa Tawa as pre-seasoned with edible oil, so a buyer should not assume that an initial oven-seasoning cycle is required.
Prepare the surface
Follow the manufacturer's first-use directions, especially for a pre-seasoned finish or shipping coating. Wash only as instructed and dry completely. Do not apply an internet recipe for oven seasoning when the tawa's handle, finish or care guide does not approve that method.
Lodge describes maintenance for its seasoned cast iron as “wash, dry and rub with oil,” using a thin oil layer. That is useful evidence for Lodge cookware, not a universal specification. For another brand, use the oil type, surfaces and heating method named in that product's guide.
Heat in a ventilated kitchen
If the maker calls for a reseasoning cycle, follow its temperature, duration, ventilation, handle and cooling instructions exactly. Do not guess a temperature from the appearance of the pan, and do not place a tawa in an oven unless the whole product is approved for oven use.
Dosa release also depends on batter, surface condition, pan temperature and technique, so seasoning alone cannot guarantee a result. Use the cooking and preheating guidance for the exact tawa.
Maintain it after cooking
Use the cleaning method permitted by the maker. Lodge's current guide for its cast iron says to hand-wash with warm soapy water, dry completely and add a thin layer of oil; it also warns against soaking or dishwashing its products. Apply those steps to Lodge cookware and use the equivalent exact-brand guidance for another tawa.
If rust, flaking, a sticky surface or damage appears, use the manufacturer's restoration instructions or service route. Store the tawa dry and follow the stated stacking or oiling guidance.
The safe sequence is: identify whether the product is pre-seasoned, follow its first-use directions, keep it completely dry, use only the approved oil and heating method, and reseason only when the care guide calls for it.
Seasoning decision checklist
- Is the exact tawa sold as pre-seasoned?
- Does its manual require first-use seasoning or only washing/drying?
- Which oil and surfaces does the maker approve?
- Is stovetop or oven seasoning permitted for the whole product?
- What temperature, time and cooling method does the maker specify?
- What does the guide say about rust, stickiness or flaking?
