“Stainless steel” names a material; “triply” names a three-layer construction. A triply vessel can itself use stainless steel on its cooking surface and exterior, so the labels are not opposites. Compare the exact layer specification, where those layers extend, vessel shape, weight, hob compatibility and care instructions.

Elgi Ultra's current 3 L Duracook Triply cooker gives a model-specific example: the maker lists an inner SS 304 layer, an aluminium middle layer and an SS 430 outer layer. Ultra's 26 cm flat-bottom kadai is listed as 304 SS triply with a 2.5 mm body. Those details establish the construction of those exact products, not every item described as triply.

How the constructions cook

First identify whether the product is single material, has a bonded base, or carries its layers through the body. Marketing terms alone do not reveal thickness, layer metals or side-wall construction. Ask for an exact specification when the page only says “stainless steel” or “triply.”

No construction replaces the manufacturer's heat and care guidance. Match the burner to the base, follow the stated preheating limits, and confirm which handles or lids can become hot. Compare actual cooking results only on matched vessel shapes and sizes; Rhisa has not independently tested the products in this guide.

Weight, feel and price

Weight, balance and lid fit can matter more in daily use than the number of layers in a headline. Compare net weight and dimensions for the exact size, then imagine lifting it with food. A lighter or lower-cost vessel is not automatically inferior if its documented construction and shape fit the task.

Check whether the product is compatible with your gas, electric or induction hob. Induction requires a suitable magnetic exterior; stainless steel as a category does not automatically guarantee compatibility. Look for clear construction details, oven limits if relevant, warranty terms and guidance on dishwasher use.

Care is straightforward

Use the exact product's washing and utensil guidance. The Ultra 26 cm kadai page identifies that model as dishwasher compatible, but this cannot be generalized to every stainless-steel or triply product. Follow the maker's approved cleaners and cooling instructions for the finish you buy.

Choose by verified construction and task rather than assuming that one label always wins. For a kadai, look at usable capacity, curves, handles and body construction. For a saucepan or cooker, compare base, lid, weight and compatibility. Construction is one part of the decision, not a quality ranking by itself.
